We all need some comfort food from time to time, especially when is freezing cold outside. Although the “sofa-urge” could be pretty bad after very rich meals. So why not trying something lighter yet tasty? Here is where our Meaty Coconut Curry hits the spot. A succulent Thai veggie curry where zucchini, aubergines and mushrooms perfectly blend with coconut meat to create a cheerful dish full of flavour. A healthy curry option that will warm you up and save you from a food coma!

  (for 4 people…or 4 days)

6 slices of Coconut meat (we have used Mighty Bee)

1 onion

3 gloves of garlic

1 bunch of coriander seeds

2 aubergines

10-15 mushrooms 

1 courgette

Organic vegetable stock

1 teaspoon of curry    

1 teaspoon of paprika

1 teaspoon of Chilli powder  

 1 teaspoon of turmeric  

  Sea salt &  black pepper to taste


Vegan, Gluten-free, Refined Sugar-free


STEP 1) Chop all the vegetables into small pieces and leave them aside.

STEP 2) Pour few drops of coconut or olive oil in a large wok and place it on low fire for a couple of minutes, before adding the chopped onions.

STEP 3) Once the onions are lightly golden, add the other vegetables. It’s advisable to start with the aubergines as their moisture will save you from burning the rest of the vegetables.

STEP 4) Sprinkle half a teaspoon of all the spices, add the vegetable stock, some water and lastly the rest of the vegetables. This will allow the spices to blend nicely and the vegetables get a nice flavour.

STEP 5) Mix the coconut butter with the coconut milk and pour them into the wok. For a stronger and richer taste use the classic condensed coconut cream, which we tend to avoid as too overpowering and heavier for the stomach.

STEP 6) Keep stirring for other 5-7 minutes ensuring that the curry doesn’t burn.

STEP 7) Serve it warm and if you like, with some whole grain croutons or multi-seeds bread slices to tuck in!
