Round courgettes are too cute to be chopped so we decided to stuff them with some colourful ingredients. Check out this super easy and stress-free recipe if you are looking for a wonderfully light, delicious and entertaining dish!


Raw, Gluten-free, Nuts-free, Refined Sugar-free


2 round courgettes/zucchini 

Organic chickpeas (we have used Mr Organic)

2  cups of purple sprout broccoli

Organic red beet sprouts

4-5 radish

Fresh lemon juice (we used a pink one!)

Chilli, salt and pepper to taste

Extra Virgin Olive Oil (we have used Belazu)


STEP 1) Preheat oven 220°C. Wash the courgettes, slice the top off and with a spoon, scoop out the flesh (and save it!)

STEP 2) Drizzle the courgettes with olive oil and season with salt and black pepper; bake for about 20 minutes.

STEP 3) Steam the broccoli for 20 minutes then mix them with the chickpeas and the red beet sprouts.

STEP 4) Slice the radish and add them to the mix; combine thoroughly while adding oil, salt, chilli and pepper to taste.

STEP 5) Once the courgettes are ready, stuff them with the salad mix and drizzle with some lemon juice.
